BRAZIL NUT PESTO

Brazil nuts take this pesto down a new delicious path! They offer a nutritional dose of selenium and protein, and combined with walnuts this pesto also offers those important omega 3 fatty acids.
But, beyond all these healthy benefits, this pesto tastes terrific, and is a complete breeze to make!
INGREDIENTS:
½ cup raw brazil nuts bran
¼ cup raw walnuts (or can use pine nuts)
1 medium-large clove garlic, quartered
2 Tbsp water (see note)
¾ tsp sea salt
freshly ground black pepper to taste
3 Tbsp brazil nut oil
2 Tbsp water (see note)
3 cup (lightly packed) fresh basil (tender leaves and stems only)
¾ lb(s) dry pasta of choice (see note)
extra brazil nut oil, salt, pepper, and lemon wedges for serving (optional)
HOMEMADE BRAZIL NUT BUTTER
Healthy nut butters are becoming seemingly popular because they are delicious, full of nutrients and can be used in so many different ways.
INGREDIENTS:
Brazil nuts bran
Pink Himalayan salt
Brazil nut oil
Maple syrup / cinnamon (optional for those with a sweet tooth)
Food processor
Spatula
Tight glass Jar (to contain butter)

A no-bake Christmas treat that can easily be adjusted according to your own preferences. It's wonderful for making with children too.

4 tbsp golden syrup
200g/7oz amaretti biscuits

4 tbsp caster sugar
2 tsp butter for cooking
2 bananas, peeled and chopped
30g/1oz chocolate, chopped
